Favorite Crock pot meals

Might be hard to believe, but I don't like spending a lot of time in the kitchen at dinner time.  But I make dinner just about ever single night. Eating out can be expensive.  As summer approaches, the prospect of playing outside or being at a park in the afternoon sounds much more fun than being in a kitchen for 2 hours before dinner. And, since we are creatures of habit at my house, we almost always eat around 5:30 when Aaron gets home from work.  That said, I'm on a quest to use my crock pot more so that I can enjoy more time with my boys, more time outside, and less time in the kitchen.  Plus, even with air conditioning, who likes to turn the oven on during the summer?  With the crock pot, I can do any cooking and prep early in the day and not when it's warmest.

Beef Fajitas  I love this one from A Year of Slowcooking because it's so simple...meat, onion, bell pepper, and seasoning with water.  That's it!! Eat in corn or flour tortillas and serve with beans and/or rice for a side dish. Stir fry beef can be hard to find is the only challenge I've come across.  Winco sells "top roast" steak that you have to cut up yourself.  I try to find it with a reduced price sticker when I can!

Crock pot Mexican Tortilla Lasagna
This is delicious and makes a TON of food.  I plan to eat this two days in a row for dinner.  Sometimes there's also enough for a lunch portion too.  A bit more prep, but it doesn't take very long to cook- so I sometimes don't throw it all together 'til midday and there is plenty of time for it to cook.

Whole chicken in a crock pot
 This recipe from weelicous is very versatile.  Prep is EASY (throw it in the crock pot with a lemon and some herbs inside, sprinkle with some coarse salt, and turn on the crock pot!).  Cooking time varies with your crock pot and size of chicken...so you'll want to use a meat thermometer. We usually eat it rotisserie style the first night, then either freeze the extra meat to pull out for chicken fajitas or tacos, or I will use the rest for making some homemade soups for the freezer.  You can boil parts of the chicken to make your own broth too.
